Cod and Leek Soupe (or Cod and Leek Soup)cod and leek soupe (3)

A delicious, thick, main course semi soup. I call it a “soupe” because it is more than just a soup! Full of fresh flavours and really set off by a topping of Mediterranean Vegetable Medley

For 2 good portions:

  • 250g fillet of cod, cut into 2 portions
  • 1 large leek, sliced into rings and cleaned
  • Butter
  • Salt & Pepper
  • Splash of white wine (optional)
  • Squeeze of lemon juice
  • 3 tsp creme fraiche

To make:

put the leeks into a saucepan, dot with butter, season with salt & pepper

place the cod on top, add the wine and lemon juice

cover and bring to the boil then simmer for 20 minutes

add the creme fraiche, stir and cook for a final 5 to 10 minutes until the leeks are fully cooked and the cod is still moist

serve as is or topped with Mediterranean Vegetable Medley to add another raft of flavours and colour

Serves 2:

1/2 medium courgette/zucchini, chopped

1/4 red bell pepper, chopped

1/4 green bell pepper, chopped

1 large tomato, (*ideally skinned and seeds removed) chopped

2 tsp olive oil

fresh or dried thyme, or herbes de Provence

salt & pepper

To make:

over medium heat cook everything except the tomatoes for a few minutes

add the tomatoes and cook until all are tender but not soft and mushy

serve as a side or use as a topping, for example on top of the Cod and Leek Soupe

*the mixture will be wetter if the seeds are still in but it is still good
