Turkey with Lettuce Bacon & Onion (2)This is perfect as a quick supper or lunch dish – and ideal if you have more lettuce than you know what to do with in the garden (that was my inspiration)! It takes less than 10 minutes to create

Ingredients per person:

  • I turkey escalope
  • 1 small onion, finely chopped
  • 1/2 large (or 1 small) lettuce, large leaves torn up
  • handful of lardons
  • thyme – fresh or dried
  • splash of rose wine
  • soup spoon of cream
  • cracked black pepper

To make:

  • place the lardons and onion in a skillet large enough to take all ingredients
  • cook over medium heat until the lardons sweat and start to colour and the onion is translucent
  • increase the heat and add the turkey – cook for a minute or so until browning then turn over and cook for a further minute or so
  • season with thyme and black pepper (you probably won’t need salt because of the lardons but check before serving)
  • add a splash of rose and stir to deglace the pan
  • add the lettuce and cover with a lid, cook for about a minute until just starting to wilt
  • add the cream, stir, and bubble for about 30 seconds to a minute until all is melded, check seasoning and serve…
