Spinach, Mushroom & Bacon Soup with 4 Spices – delicious, quick, nutritious and with a warming mix of spice! Perfect for lunch or a light supper

Spinach and Mushroom soup with bacon & 4 spices (4)You’ve got some choices with this – chunky or smooth, natural or creamy… you can even add a splash of wine at one stage!! It’s all ready in 10 – 15 minutes

Ingredients for 2 servings:

  • I or 2 heads of spinach (or a 200g bag), roughly chopped
  • 1 small onion, finely chopped
  • 100g lardons (smoked)
  • 10 cup mushrooms, sliced
  • 1 teaspon quatre epices (4 spices…black pepper, nutmeg, cloves, cinnamon) or just use black pepper & nutmeg
  • 1 low/no sodium vegetable stock cube (natural)
  • splash of white or rose wine (optional)
  • 10cl cream (optional)

 

To make:

  • place the onion and lardons in a medium saucepan and cook over low/medium heat until the lardons are sweating and the onion is translucent
  • add the mushrooms and cook for a couple of minutes until softening
  • add the spinach, spice, stock cube, stir and cook for a couple of minutes
  • add the wine if using and bubble until reduced
  • add enough water to cover the spinach & mushroom mixture and simmer, covered, for a few minutes
  • add the cream if using and heat through, check the seasoning¬†
  • either blend till smooth in a food processor or serve as is…
